Ingredients

4oz cream cheese

8oz creamy cottage cheese

1 cup heavy cream 1/2 vanilla bean or vanilla extract

pinch of salt

1/2 cup sugar

Preparation

Line the molds with cheesecloth that has been soaked in cold water & wrung out.If thin use a double layer.Cloth should extend over sides of mold so as to cover. Refrigerate.

Whip cream cheese until light & airy,slowly adding 1/4 cup sugar & pinch of salt. Whip in cottage cheese & add vanilla bean or vanilla extract. Whip heavy cream in chilled metal bowl until firm, adding slowly 1/4 cup sugar. Lightly fold whip cream into cheese mixture mixing well. Spoon mixture into molds covering well.Set molds over pan to drain & place in refrigerator preferably overnight. To serve; unmold & plate with Fresh fruit & syrup. strawberries, raspberries.blueberries work well. Enjoy!
