Ingredients

2 1/4 cups white flour

1 cup firmly-packed brown sugar

3/4 cup sugar

3/4 cup canola oil

2 1/2 tsp cinnamon

1 1/2 tsp ground ginger

1/2 tsp salt

1/2 cup chopped walnuts ( or almonds or pistachios)

1/2 tsp cinnamon

1 cup buttermilk ( or 1/4 cup lowfat sour cream + 3/4 cup milk, blended)

1 egg, beaten lightly

1 tsp baking powder

1 tsp baking soda

Preparation

Preheat oven to 350. Grease 9x13 baking dish. Blend first 7 ingredients in large bowl & blend well. Transfer 1/2 cup of mix to small bowl.Stir in walnuts and 1/2 tsp cinnamon and set aside. Add buttermil, beaten egg, baking powder & baking soda to remaining mixture in large bowl and blend thoroughly. Pour batter into prepared dish, spreading evenly. Sprinkle nut mixture over the top. Bake until tester inserted in center of cake comes out clean, about 35 - 40 min. Serve warm from oven, or let cool.
