Ingredients

1 c plus 2 tbsp unsalted butter softened

1 c packed brown sugar

1 egg

1/4 cup plus 2 tbsp molasses

2 1/2 c flour

2 1/4 tsp baking soda

1/2 tsp kosher salt (course)

1 tbsp ground ginger

1 tbsp cinnamon

2 tsp cloves

1 1/2 tsp nutmeg

1/2 allspice

2/3 c granulated sugar

Preparation

Beat butter and brown sugar with electric mixer on medium speed until light and fluffy (5min)

Beat in egg and molasses

Stir in remaining ingredients except granulated sugar

Cover and refrigerate at least 2 hours

Oven at 350

Line cookie sheet with parchment paper or silicone mat.

Place the sugar in a small bowl

Shape dough into balls and roll in the sugar - put balls on cookie sheet

Bake for 8-10 minutes cool two minutes then transfer to a cookie sheet.

I find these freeze really well.
