Ingredients

1 15-oz can creamed corn

1 15-oz can kernel corn

or

1 ½ cups frozen corn or fresh corn kernels

1 box Jiffy corn muffin mix

1 large egg

¼ pound unsalted butter, softened

8 oz sour cream

Preparation

Preheat oven to 375 degrees.

Spray an 8x8 or 9x9 casserole pan thoroughly with PAM.

Mix all ingredients together. Pour into prepared baking pan.

Bake at 375 degrees for 40-45 minutes, or until firm.

Cool for 5 minutes, cut into squares
