Ingredients
1-16 oz. frozen corn thawed
1-15 oz. can black beans (rinsed and drained)
1-Small can sliced black olives (drained)
2-Medium red peppers -diced
2-Medium green peppers-diced
4-Large tomatoes-diced
1-Medium red onion-diced
1-Medium sweet onion-diced
5-cloves minced garlic
1/2 cup olive oil
1/4 cup lemon juice
1/2 cup apple cider vinegar
1/2 cup chopped cilantro
1-tbsp. oregano
1-tsp. salt
1-tsp. pepper
1 small jalapeno pepper-diced
Optional -4 avocados-diced ( add just before serving)
Preparation
Combine all ingredients in a large bowl, mix thoroughly and refrigerate over night.
