Ingredients

¾ cup cornmeal

1 ¼ cups milk

1 cup all purpose flour

1/3 cup granulated sugar

1 tbsp baking powder

½ tsp salt

1 egg

¼ cup vegetable oil

Preparation

Combine cornmeal and milk. Let stand for 10 minutes. Combine flour, sugar, baking powder and salt in a large bowl. Add egg and oil to cornmeal mixture. Mix well. Add to dry ingredients, stirring just until combined. Fill greased muffin pans 2/3 full. Bake at 400’F (200’C) for 15 to 20 minutes.
