Ingredients

4 T olive oil

2 medium onions, chopped

4 cloves garlic, chopped

2 zuccini, diced

2 stalks celery, cut up

2 stalks broccoli, cut up

2 carrots, sliced

2 - 3 small potatos, diced

1 can kidney beans

2-3 cans diced toms, in sauce

S & P to taste

3 - 4 cups boiling chicken broth

1/2 cup shell macaroni

1 tsp dried basil

1/2 tsp dried oregano

Preparation

  1. Heat oil in dutch oven. Add garlic and all veggies including potatos. Cook 5 mins.
  2. Add toms and broth. Bring slowly to a boil and simmer over med heat for 30 mins.
  3. Add macaroni, beans and herbs. Cook 15 mins more.
