Ingredients

1 1/4 cups water

1 cup couscous

3 green onions, chopped

1/3 cup grated Parmesan

2 tablespoons breadcrumbs, plus additional for coating

1 large egg

2 teaspoons oregano

salt and pepper to taste

1 tablespoon olive oil

Preparation

Heat water in a medium saucepan until boiling. Stir in couscous and turn off heat; cover, let stand five minutes.

Stir in next six ingredients. Shape into 8 patties and coat with breadcrumbs. Heat olive oil in nonstick skillet and fry patties for four minutes per side.
