Ingredients
3 tbs butter/oil
1 1/2 cups israeli couscous
1/2 cup red fine quinoa
28 oz vegetable broth
1 jar Trader Joe’s Spicy Corn Salsa
1 ripe mango, cut into cubes
Optional: chopped cilantro
Preparation
Saute couscous and quinoa in butter. Add in vegetable broth. Cook until broth is absorbed (20 min or so) Take off heat. Mix in spicy corn salsa. Mix in mango. Add in cilantro (optional). Serve.
