Ingredients
This recipe can be used with most fruits: , cherries, berries, peaches, apples (maybe sautéed first)
2 cups fresh cranberries (1 bag)
½ cup sugar
½ cup chopped walnuts
2 eggs (room temp)
1 cup sugar
1 cup flour
¾ cup melted butter (or some combination of butter and Crisco is ok
Preparation
Grease 10-inch pie plate or deep dish pie plate. Spread cleaned and washed-over cranberries on bottom of pie plate. Sprinkle with ½ cup sugar and nuts.
In mixer, beat eggs well, add 1 cup sugar, beat well until light. Add flour, melted butter/shortening to eggs,sugar mixture. Beat well. Pour this batter over top of cranberries and bake at 325 F for 50-60 minutes. An easy and delicious cake to bake. Use or freeze.
