Ingredients

Wafers:

1 cup butter (2 sticks)

1/3 cup whipping cream

2 cups flour

granulated sugar

Filling:

¼ cup butter

¾ cup powdered sugar

1 tsp. vanilla

1 egg yolk

Preparation

Wafers

Mix above mixture and chill for 1 hour. Roll out dough on floured board, cloth or towel to about 1/8" thickness. Cut out into 1 ½" rounds. (I use a shot glass to cut out circles.) Coat both sides of cookie with granulated sugar. Place on ungreased cookie sheet and prick cookie with fork in 4 places. Bake for 7-9 minutes at 375o. Cool cookies and then put two cookies together with filling.

Filling

Blend filling ingredients together. Tint color desired. (You may have to double this filling amount).
