Ingredients
1 lb fettuccine noodles
12oz chicken sausage, sliced into coins
1tbsp olive oil
1 cup frozen mixed vegetables, thawed and drained
1 cup light Alfredo sauce
1/2 cup chicken stock
1/2 cup Parmesan cheese blend, grated
Preparation
Cook the fettuccine following the package instructions.
Heat the olive oil in a ten inch skillet.
When hot , add and brown the sausage. Stir in the vegetables, the Alfredo sauce and the chicken stock. Bring to a simmer.
Add the pasta to the simmer mixture. Taste and adjust the seasonings if needed.
Sprinkle with Parmesan cheese.
Serve with crusty rolls.
