Ingredients
1/4 lb. silken tofu (2 inch cube)
1/4 C watercress leaves
1/4 C mixed herbs, such as basil, parsley and dill
1 scallion, cut into 1 inch lengths
2 T white wine vinegar
1 T fresh lemon juice
1 T water
1 tsp. Dijon mustard
Preparation
In a blender, puree all of the ingredients until smooth.
