Ingredients
2 T oil or cooking fat of choice
1 large onion, peeled and chopped
4 cloves garlic, peeled and coarsley chopped
one 28 oz can crushed or diced tomatoes
1 1/2 cup s chicken stock
1 cup unsweetened coconut milk
2 Tminced fresh basil, plus 1 T for garnish
1 T tomato paste
1 T balsamic vinegar
Preparation
In large dutch oven, heat the oil over medium heat, and saute onions. Stir in garlic.
Mix in remaining ingredients and simmer for 10 minutes.
Puree in either a blender or with an immersion blender.,
