Ingredients
For the Salmon
Salmon Fillets 4 (skin on)
Olive Oil
Salt
Basil/Thyme a small handfull (chopped)
For the Crab Mash
New Potatoes 8 par boiled and peeled
Olive Oil
Spring Onions 2 chopped
Salt & Pepper
Vinaigrette a drizzle
Coriander 1/4 cup
Crab Meat 200 g
For the Vinaigrette
Olive Oil 3.5 tablespoons
Lemon Juice 1 tablespoon
Salt & Pepper
Water 1 teaspoon
Preparation
For the Crab Mash
- Pour a little oil in a pan
- Add the peeled & par boiled potatoes and heat them up
- Remove and crush gently with a fork to absorb the olive oil
- Chop and add the spring onions
- Add the crab meat
- Mix it all together
- Drizzle with a basic vinaigrette (mix the vinaigrette ingredients together)
- Add some freshly chopped coriander
- Mix together
For the Crispy Salmon
- Roll the fish up and score/slice into the meat through the skin
- Season with salt & pepper and stuff with fresh thyme or basil
- Heat the oil and when it begins to smoke, add the salmon
- Leave and turn once
