Ingredients
1 lb. uncooked sweet potatoes, peeled and cut into 1/2" pieces
1 lb. uncooked lean only pork loin, cut into 1" pieces
14-1/2 oz. canned diced tomatoes, with green chilies
1 closve garlic minced
1/4 C. unsweetened orange juice
2 med. uncooked scallions, chopped (green parts only)
1/2 t. table salt
1/4 t. ground cumin
1/4 t. black peper
2 T. fresh lime juice
2 T. fresh cilantro, chopped
Preparation
Place potatoes, prok, tomatoes, garlic, orange juice, scallions, salt, cumin, and pepper in a 4-5 qt. slow cooker; cover and cook on low setting for 7 hours.
Stir in lime juice and cilantro; cover slow cooker and cook for 5 min. more. Yields about 1-1/2 C. per serving (inlcuding some cooking liquid).
