Ingredients

2 medium to large cucumbers

1 cup of fresh dill, using the finest leaves and no thick stems

1 to 2 tbsp. of vinegar

1 cup slivered almonds

1/4 cup good quality olive oil

salt and pepper

Preparation

Peel and seed cucumbers, slicing into 1/2 inch pieces. Toss with the dill and vinegar. Put into serving bowls and top with slivered almonds. Drizzle the olive oil over top, and add salt and pepper to taste.
