4 cucumbers peeled, seeded and sliced thin
1/3 cup white wine vinegar
1 tablespoon lemon juice
2 teaspoons olive oil
1.5 teaspoons sugar
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup olives
1 shallot
1/2 cup fresh parsley
1 tsp minced fresh oregano
3 tablespoons sliced almonds, tasted and chopped coarse

simmer vinegar in small sauce pan over medium lowe heat. reduce to 2-4 tablespoons; let cool. wisk in lemon, oil, sugar, salt and pepper
