Cucumber
rice vinegar
fresh ginger
salt
sugar
Preparation
-cut 3 to 5 cucumbers on thinly with mandolin place in large bowl -grate about a 2 inch piece of ginger
-pour half cup of rice vinegar in separate bowl combine about 4 to 5 Tablespoons of sugar, 3 to 4 teaspoons of salt and grated ginger. pour mixture over cucumbers and let stand in refrigerator for at leas tan hour prior to serving. as a garnish may sprinkle roster sesame seeds on salad at serving.
