Ingredients
1/2 cup cumin seeds, toasted
1 Tablespoon coriander seed, toasted
1 Tablespoon paprika
1 teaspoon thyme
1 teaspoon cayenne pepper
1 Tablespoon salt
1 teaspoon black pepper
Preparation
In a spice grinder or clean coffee grinder, grind the cumin so there is some powder and coarse pieces. Place in a bowl. Grind the coriander seeds to a fine powder. Mix together the cumin, coriander, paprika, thyme, cayenne pepper, salt and pepper. Store in an airtight container.
