Ingredients

6 Tilapia Fillets

1/3 cup Vegetable Oil

1 cup Fine Cornmeal

1/2 cup Coconut Cream

2 Eggs

1 tablespoon Curry Powder

Salt and Pepper

Preparation

Combine eggs, coconut milk, curry, salt and pepper. Dredge fish in cornmeal then dip in coconut mixture. Let excess drip off. Saute the fillets until golden brown and crisp.
