Ingredients
1 ½ cups White Rice
2 teaspoons Chicken Base
1 jar Marinated Artichoke Hearts, cut in quarters
1 Red Pepper, small dice
2 Scallions, sliced
10 Green Olives, sliced
¼ cup Mayo
1 tablespoon Curry Powder
Preparation
Cook rice with soup base. For the dressing: combine oil from artichokes, mayonnaise and curry powder. Wisk until smooth. Add dressing to warm rice. Add peppers, scallions, green olives and artichoke hears to salad. Cover and refrigerate before serving.
