Ingredients

5 ripe hot peppers, preferably Dancing Spirits

3 cups chopped tomatoes

1/4 cup rice vinegar

1/2 teaspoon cinnamon

1/2 teaspoon allspice

1/4 teaspoon cloves

1/4 teaspoon ginger

4 1/2 cups sugar

1 box Sure Jell

Preparation

Finely chop the peppers, including seeds and ribs for heat. Place peppers and tomatoes in a large, wide-bottom kettle (at least 6 quart). Bring to a boil, reduce heat and simmer for 10 minutes.

Meanwhile measure out sugar and set aside. Prepare jars and lids.

When simmering is complete, add vinegar and spices, stir thoroughly. Add Sure Jell and bring to a full rolling boil over high heat, stirring constantly. All at once, add sugar, and continue stirring constantly. When sugar is completely dissolved, continue at full rolling boil for one minutes, still stirring. Remove from heat. Fill jars to 1/2" headspace. Process in boiling water bath for 15 to 20 minutes, depending on your area.
