Ingredients
Mixed bag of baby greens and/or arugula
Roasted veggies - whatever you have in the fridge:
Acorn squash (skin on) and yams (no skin) are a winner, beets, carrots, peppers, bit of onion, beets,fresh fennel are great too.
Nuts
Cranberries
Sesame seeds
Feta or plain goat cheese
Dressing
1/4 cup grapeseed oil
1/4 cup sherry vinegar
1 tbsp. honey
1 tsp Dijon
1 tsp dark sesame oil

Preparation
Roast veggies - toss in olive oil with a splash of balsamic and coarse salt and roast til done. Let cool.
Add nuts, cranberries, sesame seeds and cheese and toss with greens.
Mix ingredients for dressing til frothy
