Ingredients
1 lb ground beef
1 cup chopped onion
1 cup corn
0.5 cup sour cream
2 cups shredded cheese
1 10 oz can enchilada sauce (or homemade)
8 in flour tortillas (can use corn too)
Preparation

Brown beef & onion. Drain fat. Add corn, cook few minutes until soft. (Can also add green chiles or spinach or other vegetables too). Stir in sour cream & 1 cup cheese.
In a glass baking pan (9x13’’) pour 1/4 cup sauce in bottom of pan. In a flour tortilla, spread a couple tsp sauce then a scoop or so beef mixture. Roll up. Put in pan seam side down. Bake at 350, 30-45 minutes until cheese is bubbly.
Can also use chicken, and verde sauce is good too instead of red enchilada sauce. Can also top with black olives, green onions, etc.
