Ingredients

2 cups all purpose flour or combo of white and wholewheat

3/4 to 1 cup sugar half brown; half white

2 tsp. baking soda

2 tsp. cinnamon

salt

2 cups grated carrot

1 apple grated

1/2 cup raisins

1/2 cup sunflower seeds

1/2 cup coconut

3 beaten eggs

1/2 cup vegetable oil

1/2 cup plain yogurt

2 tsp vanilla

Preparation

Grate the carrot and the apple.

Add the wet ingredients and the raisins, seeds and coconut. Mix dry ingredients together.

Add dry to wet.

Bake at 350 for 20 minutes or until done.
