Ingredients

1/2 cup plus 2 T. nonfat plain greek yougart

1/2 c. olive oil

3 T apple cider vinegar

2 T. finely grated fresh ginger

2 Granny smith apples-peeled cored and julienned

2 Fuji apples–peeled cored and julienned

1/2 lb. brussel sprouts, shredded

2 T. chopped chives

Preparation

In small bowl, whisk the yougart, olive oil, vinegar and season with salt and pepper. In a large bowl combine the apples, brussel sprouts and chives. Add the dressing and toss to coat.

This can be made the night before and refridgeratd.
