Ingredients

2 small shallots, finely diced

2 teaspoons Dijon mustard

1/4 cup White Balsamic Vinegar

1/2 cup extra virgin olive oil

4 teaspoons maple syrup

salt and black pepper

spring mix

1/4 cup shaved parmesan or manchego

1/4 cup each dried figs and apricots, chopped

Preparation

  1. Make the dressing by combining the chopped shallot, Dijon and balsamic vinegar in a large mixing bowl.
  2. Slowly drizzle in the olive oil while you whisk to emulsify.
  3. Add the maple syrup and season to taste with salt and pepper.
  4. Assemble salad by tossing greens and dried fruit in a large mixing bowl with maple balsamic dressing.
  5. Top with shaved Parmesan or manchego.
