Ingredients
2 small shallots, finely diced
2 teaspoons Dijon mustard
1/4 cup White Balsamic Vinegar
1/2 cup extra virgin olive oil
4 teaspoons maple syrup
salt and black pepper
spring mix
1/4 cup shaved parmesan or manchego
1/4 cup each dried figs and apricots, chopped
Preparation
- Make the dressing by combining the chopped shallot, Dijon and balsamic vinegar in a large mixing bowl.
- Slowly drizzle in the olive oil while you whisk to emulsify.
- Add the maple syrup and season to taste with salt and pepper.
- Assemble salad by tossing greens and dried fruit in a large mixing bowl with maple balsamic dressing.
- Top with shaved Parmesan or manchego.
