Ingredients

• 3 egg yolks, lightly beaten

• 1-2 T. fresh lemon juice

• 1/4 t. coarse Kosher salt

• Pinch of white pepper

• 1/4 lb. (1 stick) butter, melted and still hot

Preparation

  1. Combine all ingredients except butter in a blender and mix well.
  2. With motor on high, add hot butter a drop at a time until smooth and thick

Variations: Add 1-2 T. fresh herbs like dill or parsley, chopped
