Ingredients
1 cup white rice
1 can or 1 1/2 cups cooked black beans, drained
2 1/4 cups water, broth, or stock
1 clove (about 1/2 teaspoon) garlic, minced
1 teaspoon ground cumin
1/4 teaspoon dried oregano or 1 teaspoon fresh oregano
1/4 teaspoon dried thyme or 1 teaspoon fresh thyme
Preparation
Place all ingredients in a saucepan and bring to a boil over medium heat. Once boiling, turn heat down to medium low and allow to simmer uncovered.
When the liquid level reaches below the rice, cover and turn heat down to low.
When no more liquid remains at the bottom of the pan, remove pan from hot burner and allow rice to stand for 10 minutes.
Add salt to taste and enjoy!
