Ingredients

1lb ground beef

1/2 c chopped onion

1 t minced garlic

16 oz jar tomatillo salsa

1/2 c chopped cilantro

6 oz box of Mexican rice (cooked)

8 oz of shredded cheese (Mexican blend)

20 oz package of burrito-size tortillas

10 oz can enchilada sauce

Preparation

In a large pan combine beef, onion, and garlic; cook over medium heat until beef is browned. Drain grease; stir in salsa; cilantro; cook rice; one c cheese. Spoon mixture into tortillas; roll up; place seam down in a sprayed 9x13" glass casserole dish. Top with enchilada sauce; bake for 30 minutes at 350. Sprinkle with cheese and continue baking for 5 minutes.
