Ingredients

4 Halibut steaks

2 Tbsp Chives

1 1/2 cups Italian Parsley

2 Lemons

1/2 cup Arugula

1-2 Tbsp Capers

1/2 cup EVOO

Red Pepper Flakes

Preparation

Prepare the Fish

  • Chop chives and 1 cup of parsley and mix in a bowl
  • Add zest of 1 lemon to mixture and stir
  • Place Halibut in baking dish, drizzle with EVOO, and season with salt and pepper
  • Top Halibut with parsley mixture and cook uncovered at 375 for 8-10 minutes until flaky

Prepare the Gremolata

  • Add arugula and 1/2 cup parsley to food processor
  • Add 1-2 tbsp capers to taste
  • Add zest and juice of 1 lemon, then add salt, pepper, and red pepper flakes to taste
  • Add 1/2 cup EVOO and blend

Serve by topping each halibut steak with a generous amount of gremolata
