Ingredients

1 cup all-purpose flour
1/4 cup milk
2 eggs
1/2 teaspoon ground nutmeg
1 pinch freshly ground white pepper
1/2 teaspoon salt
1 gallon hot water
2 tablespoons butter
Preparation
Bring water to a boil. Mix flour, salt, pepper, and nutmeg. Beat eggs, add milk to eggs. Stir egg mixture into flour mixture. Stir until smooth. Using spatzle maker, colander or cheese grater, drop dumplings into water. Cook 5-7 minutes. Fish spatzle out with a slotted spoon and drop into ice water to stop cooking. Sauté spatzle in butter or olive oil and serve. Great with grated cheese too!
