Ingredients
20 oz Lean Italian Seasoned Ground Turkey
1 large leek, chopped
4 C low salt chicken broth
1/2 cup Rice Wine Vinegar
Soy sauce to taste
1/2 package carrot & brocolli slaw
bok choy or Savoy cabbage, chopped
2 stalks of celery
20 mushrooms
Frozen edamame beans
Green onions
Multi colored fresh peppper
Preparation
- Make about 20 meatballs and brown in grape seed oil in batches. Remove.
- Add leeks and saute
- Add carrot slaw, cabbage, celery and mushrooms
- Add broth and rice wine vinegar and return the meatballs. Season to taste and simmer until vegetables crisp tender
- Add chopped green onions and plenty of pepper
