Ingredients

1 eggplant

1 tablespoon oil

1 tablespoon maple syrup

1 teaspoon dark soy sauce

1/2 teaspoon salt

1/2 teaspoon smoked paprika

Preparation

1 Cut eggplant into 1/2 inch slices 2. Combine oil, maple syrup, soy sauce, salt and paprika 3. Brush eggplant with sauce. 4. Microwave 4-6 minutes on plate covered with parchment paper. 5. Let cool and crisp on a wire rack 5 minutes. 6. Use in faux-BLT sandwich
