Ingredients
2 tomatoes
2 eggs
Optional:
a few strips of fresh basil
a few chunks of cheese
crusty bread on the side
salt and pepper to taste
Preparation
Preheat the oven to 400 degrees.
Hollow out the tomatoes, saving or discarding the inside.
Crack an egg into each hollowed tomato shell.
Cook for 15-25 minutes in a baking dish or ramekin. Test doneness with a fork several times while cooking to make sure the whites have set but the egg yolk is still runny. Oven temperatures vary so watching this carefully is important. A few minutes before ready top each with cheese if you are using some.
