Ingredients

4 eggs

4 slices Canadian Bacon

2 English Muffins, cut in half

Hollandaise Sauce

Asparagus (optional)

Pinch of Cayenne

Preparation

Poach the eggs, fry the Canadian Bacon, steam the asparagus (optional), and toast the English Muffin halves. Assemble and cover each with freshly made Hollandaise Sauce. Finish with salt and a half pinch of Cayenne.
