Ingredients
2 eggs
Spelt bread (gluten-free) with almond butter
¼ onion
¼ bell pepper
Handful spinach
Any other veggies you like (except mushrooms and potatoes)
Preparation
Chop onions, peppers and other veggies as you wish. Fry veggies with a tbsp. of coconut oil until they soften. Cook eggs as you like (I put scrambled eggs on top of my toast, but some people like to dip toast in the yolk of a sunny side up egg). Toast the spelt bread and spread with almond butter.
