Ingredients
1/2 c butter or use less olive oil
1/2 med onion diced, use more
garlic minced
2 14 oz cans diced tomatoes with juice
1 tsp salt, may not need it so go easy
1/2 tsp pepper may use white
1/4 tsp baking soda
1/2 tsp dried thyme
1 cup orange juice
1/2 c whipping cream or half n half
Preparation
Melt butter in pot and then add onions and brown. Salt and pepper them then add garlic for a few minutes. Then add diced tomatoes with juice and baking soda and thyme and let simmer for about 15 min till thickened a little. Puree in blender till smooth then add orange juice and whipping cream. Good served with basil croutons
