Ingredients

3 tbsp vegetable oil

1 tbsp all purpose flour

¼ cup chili powder

2 cups chicken stock

10 oz tomato paste

1 tsp dried oregano

1 tsp cumin

Salt & pepper to taste

Preparation

Combine chicken stock, tomato paste, oregano, cumin, salt, and pepper in a bowl. Set aside. Heat oil in a medium sauce pan over medium heat. Using a wooden spoon, stir in flour, stirring continuously 1 minute. Stir in chili powder, stirring continuously for 30 seconds. Stir in chicken stock mixture and heat to a boil, stirring occasionally. Reduce heat to simmer, allowing to cook for 15 minutes (recommend covering). Taste and adjust seasoning as needed.
