Ingredients

1 stick (8 tbsp) butter, barely melted

1 cup brown sugar

2 large eggs

2 tbsp espresso powder

Pinch of salt

1/2 tsp almond extract

1/2 tsp vanilla extract

1 cup all purpose flour

3/4 cup semi-sweet chocolate chips

1/3 cup sliced almonds

Preparation

  • Preheat oven to 350 degrees. Grease or butter an 8x8 pan.
  • Whisk together melted butter and brown sugar.
  • Whisk in eggs, espresso powder, pinch of salt, vanilla and almond extracts.
  • Stir in flour, followed by chocolate chips and sliced almonds.
  • Spread batter evenly in 8x8 pan. Optional sprinkle of sliced almonds and chocolate chips on top.
  • Bake for approximately 30 minutes or until center is minimally jiggly. Blondies should be gooey but maintain form after cooling. Makes 9-12 blondies.
