Ingredients

1 head lettuce

1 cucumber, chopped

3 tomatoes, cut into tiny wedges

1/4 cup chopped fresh parsley

1/4 cup chopped fresh mint leaves

Dressing:

1 clove garlic, chopped

1/4 cup fresh lemon juice

1/4 cup olive oil

1/4 cup red wine vinegar

1 tsp salt

1/4 tsp ground black pepper

2 small pitas or 1 large, toasted and torn into pieces

Preparation

Add tomatoes, cucumber, dressing and pita just before serving.
