Ingredients

1/2 pound Fava Beans

1 large yellow onion (diced)

olive oil

egg yolks*

1 cup sour cream

1/2 cup lemon juice

1 sprig rosemary

salt and pepper to taste

*I recommend at least 2 egg yolks but I have made it with up to 8

Preparation

  1. Blanch the fava beans for 3 minutes, drain and set aside keep some of the cooking water in reserve
  2. Heat the olive oil in a pot (can be the same pot used to blanch the fava beans)
  3. Saute the onion 2-3 minutes in the oil
  4. mix the egg yolks, lemon juice, sour cream, rosemary, salt, and pepper together
  5. Add the fava beans to the onions and simmer 5 more minutes
  6. Add the egg mixture and stir to combine
  7. Allow to simmer until beans reach the desired consistency adding the reserved water if there is not enough moisture in the pot
