Ingredients
1/2 pound Fava Beans
1 large yellow onion (diced)
olive oil
egg yolks*
1 cup sour cream
1/2 cup lemon juice
1 sprig rosemary
salt and pepper to taste
*I recommend at least 2 egg yolks but I have made it with up to 8
Preparation
- Blanch the fava beans for 3 minutes, drain and set aside keep some of the cooking water in reserve
- Heat the olive oil in a pot (can be the same pot used to blanch the fava beans)
- Saute the onion 2-3 minutes in the oil
- mix the egg yolks, lemon juice, sour cream, rosemary, salt, and pepper together
- Add the fava beans to the onions and simmer 5 more minutes
- Add the egg mixture and stir to combine
- Allow to simmer until beans reach the desired consistency adding the reserved water if there is not enough moisture in the pot
