Ingredients
1 cup crumbled feta
1 cup sour cream
2 tablespoons minced scallion
2 tablespoons minced parsley
1/2 teaspoon minced garlic
1 teaspoon minced oregano or 1/2 teaspoon dried1/2 teaspoon minced thyme leaves or 1/4 teaspoon dried
Lots of freshly ground pepper
Freshly squeezed lemon to taste
Preparation
Combine all ingredients (except the salt and the lemon juice) and mash with a fork or potato masher. (This would be where you could instead use the food processor, if desired). Taste, and add as much or as little salt and lemon juice as necessary. Garnish with extra parsley.
