Ingredients

1 1/2 cups chopped dried figs

1 Tablespoon all-purpose flour

1/2 cup water

3/4 cup unsweetened flaked coconut

1/2 cup margarine

1/3 cup sugar

1 3/4 cups quick-cooking oats, toasted

1/2 teaspoon vanilla extract

Vegetable cooking spray

Preparation

  1. Combine figs and flour in a medium bowl; toss lightly to coat.

  2. Bring water to a boil in a medium saucepan. Add fig mixture, coconut, margarine, and sugar to saucepan, stirring, stirring well. Cook, uncovered, over medium heat 5 to 7 minutes or until mixture is thickened, stirring often. Add oats and vanilla, stirring until oats are moistened.

  3. Press mixture in bottom of a 9-inch square pan coated with cooking spray. Cover and chill thoroughly. Cut into bars
