Ingredients

1/2 head of cauliflower

3 medium flounder or sole filets (about 3/4 lb)

1/2 package crabmeat (about 4 oz)

1/3 c shredded parmesan cheese

1/4 c breadcrumbs

1/4 c heavy cream

olive oil, salt, pepper

Preparation

Break up the cauliflower; drizzle with olive oil; salt and pepper to taste; bake at 350 for 40 minutes.

Mix the crabmeat, parmesan, and breadcrumbs. After 40 minutes, take out the cauliflower, and push to the edges of the baking dish. Arrange the filets in the middle of the dish, and top with the crabmeat mixture. Drizzle the cream over the crabmeat. Pepper to taste. Return to oven for 20 minutes, or until done.
