Ingredients
2-3 de-boned chicken breast
1/4 cup white onion cubed
1/4 cup red onion cubed
1 can bush reduced sodium kidney beans (drained)
1 can bush reduced sodium black beans (drained)
2 cans Safeway Fire Roasted Salsa
1 tablespoon fresh chopped garlic
2 small red/ green/yellow sweet peppers ea
1 tsp ground pepper
1 tsp kosher salt
1/3 cup jasmine white rice
1/2 cup chopped cilantro
Preparation
Brown chicken in 1 tablespoon olive oil Mix in the rest of the above ingredients (Rice will cook with rest of ingredients). Simmer for 15min Place on low for 15 min Add salt/pepper Serve when ready Top with Cilantro and Lime
