Ingredients
2 Bars 60% Ghiradelli chocolate
1/4 cup of milk
5 eggs - separate into whites & yolks
1/4 cup sugar
Powdered sugar
Preparation
- preheat oven to 350
- microwave chocolate, milk, and some salt for 1 minute, stir, then microwave for 1 more minute until completely smooth and creamy
- mix the egg whites and sugar in a blender or mixer for ~5 minutes until they are strong and fluffy. (if you turn the bowl close to upside down, they shouldn’t move)
- add 5 egg yolks to chocolate, one at a time, and whisk as you mix. Make sure well blended but don’t spend too much time
- Take the egg white, move chocolate into whites, fold it, preventing units from breaking, add chocolate little by little. When you have a consistent texture, put mixture in buttered pan
- Bake it for 20 minutes - should be completely dry
