Ingredients

2 Bars 60% Ghiradelli chocolate

1/4 cup of milk

5 eggs - separate into whites & yolks

1/4 cup sugar

Powdered sugar

Preparation

  1. preheat oven to 350
  2. microwave chocolate, milk, and some salt for 1 minute, stir, then microwave for 1 more minute until completely smooth and creamy
  3. mix the egg whites and sugar in a blender or mixer for ~5 minutes until they are strong and fluffy. (if you turn the bowl close to upside down, they shouldn’t move)
  4. add 5 egg yolks to chocolate, one at a time, and whisk as you mix. Make sure well blended but don’t spend too much time
  5. Take the egg white, move chocolate into whites, fold it, preventing units from breaking, add chocolate little by little. When you have a consistent texture, put mixture in buttered pan
  6. Bake it for 20 minutes - should be completely dry
