Ingredients

A large bunch of watercress (approx 4oz or 125 g)

1/3 cup (50g) pine nuts

1/4 to 1/2 cup (50-100ml) olive oil

1 small clove of garlic

a generous pinch of rock salt

a squeeze or two of lemon juice, to taste

Preparation

  1. Crush the garlic with a pestle and mortar or in a garlic press

  2. Add the watercress, pine nuts, crushed garlic, salt and half of the olive oil to the blender and pulse to a paste. Add more of the oil if needed to reach the desired consistency.

  3. Remove from the blender and stir a in squeeze of lemon juice.

  4. Your lovely, raw vegan pesto is ready to be stirred into your favourite dish.
