Ingredients

10 eggs, salt & pepper

4 6" zucchini sliced thick

1 med onion, chopped, sauteed till transparent

1/4 cup milk

1 1/4 cups grated Parmesan cheese

1/2 cup bread crumbs

Preparation

  • Beat eggs; blend in bread crumbs, cheese, milk and seasoning.
  • Add onion and vegetables
  • Grease pan with olive oil or PAM
  • Pour into pan, settle zucchini down into egg mixture
  • Bake uncovered 35 min at 350 on oven top rack or until it starts to brown
